Coffee production generates significant solid and liquid waste that, if untreated, can harm the environment. As the world’s second-largest coffee producer, Vietnam faces major sustainability challenges associated with these by-products. This project, led by Principal Investigator Dr. Özgür Bayram (left) and Co-Principal Investigator Dr. Van-Tuan Tran(right), focuses on transforming coffee side streams into valuable biomass through microbial biotechnology. By converting waste into mycoprotein, a sustainable protein source, the project aims to reduce environmental impact while creating added value for the coffee industry. Through a strong research partnership between Ireland and Vietnam, this initiative promotes circular economy principles, strengthens international collaboration, and supports environmentally responsible coffee production. The project’s outcomes will contribute to sustainable agriculture, foster scientific innovation, and demonstrate how biotechnology can turn waste into opportunity.
